10 lb Prime rib roast
1/4 c Black pepper
1/4 c Garlic powder
1/4 c Salt
2 Onions, thinly sliced
SEASONING MIX:
1 tb Plus 1 tsp, salt
1 tb Plus 2 tsp, white pepper
1 tb Plus 2 tsp, fennel seeds
1 tb Plus 3/4 tsp, black pepper
2 1/2 ts Dry mustard
2 1/2 ts Ground cayenne pepper

Step 1:Remove fat cap off top of meat (butcher can do this for you) and save. Place the roast, standing on the rib bones, in a very large roasting pan. Then with a knife make several dozen punctures through the silver skin so seasoning can permeate meat. Pour a very generous, even layer of black pepper over the top of the meat (the pepper should completely cover it); repeat with the garlic powder, then the salt, totally covering the preceding layer. Carefully arrange the onions in an even layer on top so as not to knock off the seasoning. Place the fat cap back on top. Refrigerate 24 hours.
Step 2:Bake ribs in a 550F oven until the fat is dark brown and crispy on top, about 35 minutes. Remove from oven and cool slightly. Refrigerate until well chilled, about 3 hours. Remove fat cap and disgard. With the blade of a large knife, scrape off the onions and as much of the seasonings as possible and discard.
Step 3:Then with a long knife, slice between ribs into 6 steaks (4 will have bones); trim the cooked surface of meat from the 2 pieces that were on the outside of the roast. Season and cook in your favorite way.

Ingredients to make Blackened Cajun Prime Rib
1 (8) lb standing rib roast (have your butcher cut it almost completely away from the bone and then tie it back together for easy roasting and carving)
fresh ground black pepper
kosher salt
6 cloves garlic, minced
1/2 cup dry red wine
blackening seasoning (recipe below)
2 cups beef stock
1 tablespoon prepared horseradish
1 teaspoon Worcestershire sauce
Step 1:Allow rib roast to sit covered at room temperature for 30 minutes. Next rub all sides with salt, pepper and garlic. Preheat oven to 230°F. Place rib roast in a roasting pan with a rack an insert the wand of a digital thermometer into the thickest part of the roast and set the alarm for 110°F. When the alarm sounds, transfer the rack and roast to a tray or plate. Allow roast to rest for 20 minutes then cut into equal portions about 1 1/2 inch thick. You can pretty much cut between the bones. Once cut into steaks, you can carve away the bone.
Step 2:Brush the grill grate with vegetable oil and preheat grill to high heat or heat a cast iron skillet to hot. If you are doing this inside in the skillet, be warned. It may get a little smoky. Season each steak liberally with the blackening seasoning on each side and cook for about 1 minute per side for rare to medium rare, 2 minutes per side for medium rare to medium. Or if you are going the skillet route, add a tablespoon of butter to the hot skillet and then quickly drop in the steak and cook using the times as above.

1 (5 pound) boneless rib-eye roast, left at room temperature for 2 hours before cooking
2 tablespoons olive oil
1 tablespoon salt

Step 1:Adjust oven rack to center position and heat oven to 250 degrees F. Heat a large (12-inch) skillet over medium-high heat. Rub roast on all sides with oil, salt and pepper. Turn on exhaust fan, add roast to hot skillet and brown on all sides, about 10 minutes total. Transfer roast to a plate. When cool enough to handle, rub garlic and rosemary all over.
Step 2:Meanwhile, pour off all but 2 Tbs. of the beef drippings. Add mushrooms to hot skillet and saute until well browned, about 8 minutes. Mix broth, wine and mustard; add to mushrooms and simmer to blend flavors and reduce slightly, about 3 minutes. Pour mushroom sauce into a bowl; set aside.
Step 3:Set a wire rack over the skillet and set roast on rack. Slow-roast in oven until roast reaches an internal temperature of 135 degrees F for medium-rare and 140 degrees F for medium, 2 1/2 to 3 hours.
Step 4:Transfer roast to a cutting board; remove rack from skillet. Pour off excess fat, if any. Set skillet over medium-high heat; return mushroom sauce to pan heat to a simmer. Add cornstarch and continue to simmer until sauce thickens slightly, about a minute. Carve meat and serve with the sauce.

1 standing rib roast, approximately 5 pounds in weight
1 1/2 cups bourbon/whiskey
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon paprika

12-15 pounds charcoal briquettes
2 pounds wood chips, (hickory chips are preferable)
Preparation:
1. Place approximately 3/4 of the charcoal briquettes into a smoker.You will need to keep back the other 1/4 of the briquettes to maintain the temperature at between 225 and 250 degrees during the cooking process.
2. Fill a second pan with cold water.
3. Soak the wood chips in bourbon/whiskey and 1/2 cup water.
4. Take the rib roast and rub it with the seasonings allowing it to rest
at room temperature until the smoker reaches the required heat and then place on the top grate.
5. Place a few handfuls of wood chips onto the fire after approximately 10 minutes of cooking time. Close the lid making sure that you check every 40-50 minutes. A good idea is to use a remote thermometer with a lead if possible to ensure that the heat remains constant throughout the cooking time.
6. It is important that you keep a close watch on the thermometer as the temperature should not vary more than ten degrees either upwards or downwards.
7. Make certain that you add more wood chips every time you check the roast to keep the correct flow of smoke.
8. Smoke the roast for approximately 8 hours or until the internal temperature of the roast reaches between 140-145 degrees centigrade.
9. Allow to rest before carving.
10. Carve and serve and take all the applause as your guests will love it.

Step 2:Place the rib roast, fat side up, in heavy roasting pan. Mix 4 teaspoons rosemary, salt and pepper in small bowl. Stir in 1/2-cup oil. Rub mixture all over roast.
Step 3:Melt 2 tablespoons butter in large skillet over medium-high heat. Add the mushrooms and sauté until golden brown. Add the shallots and garlic and sauté for 1 minute. Remove from heat. Combine flour, remaining 2 tablespoons butter in small bowl and mix into a smooth paste.
Step 4:Cook the roast until a meat thermometer inserted straight down into top center of roast registers 125°F to 130°F for medium-rare, about 2 hours 30 minutes.

Step 6:Set the roasting pan atop 2 burners over medium-high heat. Add the wine and bring to a boil, scraping up any browned bits. Add mushroom mixture, then butter flour mixture whisk constantly over medium-high heat until sauce thickens, about 2 minutes. Season the sauce with salt and pepper.
Step 7:Garnish roast on platter with fresh rosemary sprigs. Slice roast and serve, passing mushroom sauce separately.

6 to 8 lb (3 to 4 kg) beef prime rib
1/4 cup (50 mL) Dijon mustard
1 tbsp (30 mL) vegetable oil

Ingredients to make Lobster Stuffed Beef Tenderloin Roast
3 whole lobster tails
4 pounds beef tenderloin filet
1 cup butter
2 teaspoons lemon juice
1 teaspoon garlic powder
3 cups white wine
1/4 cup olive oil
1 tablespoon cracked black pepper
1 teaspoon garlic salt
Directions to make Lobster Stuffed Beef Tenderloin Roast
Step 1:Preheat oven to 425 degrees F (220 degrees C). Bring a large pot of water to a boil. Add lobster tails, and cook for 5 to 6 minutes. Remove from water, rinse and remove shells. Cut tail meat in half lengthwise. Cut tenderloin lengthwise, to within 3/4 inch of the bottom. Fill center of meat with lobster tails.
Step 2:In a saucepan, melt butter with lemon juice, garlic powder and 1 cup of the wine. Drizzle about 1/4 of the butter mixture over the lobster. Tie the tenderloin with kitchen string. Rub tenderloin with olive oil and place in a roasting pan. Pour remaining wine in bottom of pan. Sprinkle with cracked pepper.
Step 3:Bake in preheated oven for 45 minutes to 1 hour. Stir garlic salt into remaining butter mixture, and serve with slices of roast.
The secret to the success of the Grilled Citrus Prime Rib is that the orange marinade does serves two purposes. On the one hand it makes the prime rib tender whilst also giving it the most delicious flavouring. It is quick to prepare and this recipe will provide you with between 8 and 10 servings so is ideal for that special occassion and/or large family gathering.

1 prime rib roast weight 5-7 pounds
1 cup beer
1/3 cup orange marmalade
1/4 cup olive oil
3 cloves garlic, minced
3 tablespoons soy sauce
3 tablespoons brown sugar
1 tablespoon dry mustard
1/4 teaspoon pepper flakes
1/8 teaspoon black pepper
mesquite wood chips
Preparation:
1. With the exception of the roast,mix together all of the following ingredients into a medium sized mixing bowl.
2. Take the roast and pierce holes into it with a fork and then place it into a large resealable plastic bag.
3. Pour the orange marinade over the roast and then seal the bag, and leave in the refrigerator to marinate for between 2 and 3 hours.
4. Preheat grill on a medium-low heat setting. Remove the roast from the plastic bag making sure that you keep the marinade for later use.
5. Insert a meat thermometer into theroast. Add the mesquite wood chips according to manufacturer’s recommendations.
6. Place the rib roast onto the grill rack, making certain that you have a drip pan underneath that has been filled with about one inch of water.
7. Cook for between 2 1/2 and 3 hours, adding fresh wood chips approximately every 30 minutes, brushing the roast with the saved marinade during the first hour and a half of cooking time.
8. Remove the roast from the grill when ready and leave it to rest for between 15 and 20 minutes before carving.
