			<content:encoded><![CDATA[<p>The Whiskey Smoked Prime Rib is delicious and tender. It&#8217;s a little time consuming to cook, but well worth the wait.</p>
<p>Preparation Time: 15 minutes (does not include time it takes to bring the smoker up to the required temperature.</p>
<p>Cooking Time : 8 hours (If you prefer charwood, or wood chunks to charcoal, vary cooking time accordingly).</p>
<p>Total Time: 8 hours, 15 minutes</p>
<p>Serves 6 people</p>
<p>Ingredients:</p>
<p>1 standing rib roast, approximately 5 pounds in weight</p>
<p>1 1/2 cups bourbon/whiskey</p>
<p>1 teaspoon garlic powder</p>
<p>1 teaspoon onion powder</p>
<p>1 teaspoon salt</p>
<p>1/2 teaspoon paprika</p>
<p>1/4 teaspoon black pepper</p>
<p>12-15 pounds charcoal briquettes</p>
<p>2 pounds wood chips, (hickory chips are preferable)</p>
<p>Preparation:</p>
<p>1. Place approximately 3/4 of the charcoal briquettes into a smoker.You will need to keep back the other 1/4 of the briquettes to maintain the temperature at between 225 and 250 degrees during the cooking process.</p>
<p>2. Fill a second pan with cold water.</p>
<p>3. Soak the wood chips in bourbon/whiskey and 1/2 cup water.</p>
<p>4. Take the rib roast and rub it with the seasonings allowing it to rest<br />
at room temperature until the smoker reaches the required heat and then place on the top grate.</p>
<p>5. Place a few handfuls of wood chips onto the fire after approximately 10 minutes of cooking time. Close the lid making sure that you check every 40-50 minutes. A good idea is to use a remote thermometer with a lead if possible to ensure that the heat remains constant throughout the cooking time.</p>
<p>6. It is important that you keep a close watch on the thermometer as the temperature should not vary more than ten degrees either upwards or downwards.</p>
<p>7. Make certain that you add more wood chips every time you check the roast to keep the correct flow of smoke.</p>
<p>8. Smoke the roast for approximately 8 hours or until the internal temperature of the roast reaches between 140-145 degrees centigrade.</p>
<p>9. Allow to rest before carving.</p>
<p>10. Carve and serve and take all the applause as your guests will love it.</p>

<p>1&#215;9 pound well-trimmed, rib roast</p>
<p>4 teaspoons rosemary, chopped</p>
<p>1 tablespoon coarse kosher salt</p>
<p>2 teaspoons freshly ground black pepper</p>
<p>1/2 cup olive oil</p>
<p>4 tablespoons butter</p>
<p>1 pound button mushrooms, cut into ¼ inch pieces</p>
<p>2 shallots, finely diced</p>
<p>2 tablespoons all purpose flour</p>
<p>3 cups beef broth</p>
<p>3/4 cup dry red wine</p>
<p>1 bunch rosemary for garnish</p>
<h2>Directions to make Prime Rib Roast with Mushroom Gravy</h2>

<div><strong>Step 1:</strong>Preheat oven to 350*F</p>
</div>
<div><strong>Step 2:</strong>Place the rib roast, fat side up, in heavy roasting pan. Mix 4 teaspoons rosemary, salt and pepper in small bowl. Stir in 1/2-cup oil. Rub mixture all over roast.</p>
</div>
<div><strong>Step 3:</strong>Melt 2 tablespoons butter in large skillet over medium-high heat. Add the mushrooms and sauté until golden brown. Add the shallots and garlic and sauté for 1 minute. Remove from heat. Combine flour, remaining 2 tablespoons butter in small bowl and mix into a smooth paste.</p>

<div><strong>Step 4:</strong>Cook the roast until a meat thermometer inserted straight down into top center of roast registers 125°F to 130°F for medium-rare, about 2 hours 30 minutes.</p>

<div><strong>Step 5:</strong>Transfer roast to platter and cover loosely with foil and let rest 35 to 40 minutes. Skim any fat from top of pan juices and reserve juices in pan.</p>
</div>
<div><strong>Step 6:</strong>Set the roasting pan atop 2 burners over medium-high heat. Add the wine and bring to a boil, scraping up any browned bits. Add mushroom mixture, then butter flour mixture whisk constantly over medium-high heat until sauce thickens, about 2 minutes. Season the sauce with salt and pepper.</p>

<div><strong>Step 7:</strong>Garnish roast on platter with fresh rosemary sprigs. Slice roast and serve, passing mushroom sauce separately.</p>

<p>1 tbsp (30 mL) vegetable oil</p>
<p>2 tsp (10 mL) each dried thyme leaves and coarsely ground black pepper</p>
<p>1/2 tsp (2 mL) salt, preferably coarse</p>

<div><strong>Step 1:</strong>Place roast, fat-side up, on a rack in a roasting pan. In a bowl, stir Dijon with oil and seasonings. Brush over meat, coating ends lightly. Don’t coat bottom. Let stand, uncovered, until meat comes to room temperature, about 2 hours.</p>

<p>3 whole lobster tails<br />
4 pounds beef tenderloin filet<br />
1 cup butter<br />
2 teaspoons lemon juice<br />
1 teaspoon garlic powder<br />
3 cups white wine<br />
1/4 cup olive oil<br />
1 tablespoon cracked black pepper<br />
1 teaspoon garlic salt</p>
<h2>Directions to make Lobster Stuffed Beef Tenderloin Roast</h2>
<div class="recipesteps"><strong>Step 1:</strong>Preheat oven to 425 degrees F (220 degrees C). Bring a large pot of water to a boil. Add lobster tails, and cook for 5 to 6 minutes. Remove from water, rinse and remove shells. Cut tail meat in half lengthwise. Cut tenderloin lengthwise, to within 3/4 inch of the bottom. Fill center of meat with lobster tails.</div>
<div class="recipesteps"><strong>Step 2:</strong>In a saucepan, melt butter with lemon juice, garlic powder and 1 cup of the wine. Drizzle about 1/4 of the butter mixture over the lobster. Tie the tenderloin with kitchen string. Rub tenderloin with olive oil and place in a roasting pan. Pour remaining wine in bottom of pan. Sprinkle with cracked pepper.</div>

On the one hand it makes the prime rib tender whilst also giving it the most delicious flavouring. It is quick to prepare and this recipe will provide you with between 8 and 10 servings so is ideal for that special occassion and/or large family gathering.</p>
<p>Preparation Time: 12 minutes</p>
<p>Cooking Time: 3 hours</p>
<p>Ingredients:</p>
<p>1 prime rib roast  weight 5-7 pounds</p>
<p>1 cup beer</p>
<p>1/3 cup orange marmalade</p>
<p>1/4 cup olive oil</p>
<p>3 cloves garlic, minced</p>
<p>3 tablespoons soy sauce</p>
<p>3 tablespoons brown sugar</p>
<p>1 tablespoon dry mustard</p>
<p>1/4 teaspoon pepper flakes</p>
<p>1/8 teaspoon black pepper</p>
<p>mesquite wood chips</p>
<p>Preparation:</p>
<p>1. With the exception of the roast,mix together all of the following ingredients into a medium sized mixing bowl.</p>
<p>2. Take the roast and pierce holes into it with a fork and then place it into a large resealable plastic bag.</p>
<p>3. Pour the orange marinade over the roast and then seal the bag, and leave in the refrigerator to marinate for between 2 and 3 hours.</p>
<p>4. Preheat grill on a medium-low heat setting. Remove the roast from the plastic bag making sure that you keep the marinade for later use.</p>
<p>5. Insert a meat thermometer into theroast. Add the mesquite wood chips according to manufacturer&#8217;s recommendations.</p>
<p>6. Place the rib roast onto the grill rack, making certain that you have a drip pan underneath that has been filled with about one inch of water.</p>
<p>7. Cook for between 2 1/2 and 3 hours, adding fresh wood chips approximately every 30 minutes, brushing the roast with the saved marinade during the first hour and a half of cooking time.</p>
<p>8. Remove the roast from the grill when ready and leave it to rest for between 15 and 20 minutes before carving.</p>
<p>9. Sit back and enjoy.</p>
