Whiskey Smoked Prime Rib Recipe
The Whiskey Smoked Prime Rib is delicious and tender. It’s a little time consuming to cook, but well worth the wait.
Preparation Time: 15 minutes (does not include time it takes to bring the smoker up to the required temperature.
Cooking Time : 8 hours (If you prefer charwood, or wood chunks to charcoal, vary cooking time accordingly).
Total Time: 8 hours, 15 minutes
Serves 6 people
Ingredients:
1 standing rib roast, approximately 5 pounds in weight
1 1/2 cups bourbon/whiskey
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
12-15 pounds charcoal briquettes
2 pounds wood chips, (hickory chips are preferable)
Preparation:
1. Place approximately 3/4 of the charcoal briquettes into a smoker.You will need to keep back the other 1/4 of the briquettes to maintain the temperature at between 225 and 250 degrees during the cooking process.
2. Fill a second pan with cold water.
3. Soak the wood chips in bourbon/whiskey and 1/2 cup water.
4. Take the rib roast and rub it with the seasonings allowing it to rest
at room temperature until the smoker reaches the required heat and then place on the top grate.
5. Place a few handfuls of wood chips onto the fire after approximately 10 minutes of cooking time. Close the lid making sure that you check every 40-50 minutes. A good idea is to use a remote thermometer with a lead if possible to ensure that the heat remains constant throughout the cooking time.
6. It is important that you keep a close watch on the thermometer as the temperature should not vary more than ten degrees either upwards or downwards.
7. Make certain that you add more wood chips every time you check the roast to keep the correct flow of smoke.
8. Smoke the roast for approximately 8 hours or until the internal temperature of the roast reaches between 140-145 degrees centigrade.
9. Allow to rest before carving.
10. Carve and serve and take all the applause as your guests will love it.
